Grade B maple syrup is darker and has a more concentrated "maple" flavor than the lighter Grade A. The letter grade does not exactly imply quality (i.e. Grade A is not necessarily better quality than Grade B), but simply indicates the character of the syrup, which usually has a lot to do with when the maple sap was drawn from the tree. Sap runs from early in the season generally produce the lighter grade A syrup which has a mild taste, whereas later in the season, the sap tends to have higher mineral content and yields the more robust Grade B syrup.
